Hatchchiles can be used in ANY recipe that prominently features sweet or hot chile peppers. Chiles Rellenos (whole peppers stuffed with cheese and/or meat, then breaded and fried, or oven roasted) are a classic choice. Heata large pot to medium heat. Add the pork shoulder and brown the pieces on each side, about 5 minutes. Scoop the browned pork shoulder into a bowl and set aside. Cook Onion and Garlic. In the same pot, add the onion and cook for 5 minutes, until softened. Add a bit more olive oil if needed.
Firstof all, the size and shape of these two are pretty different. Guajillo peppers are about 3-5 inches long, with a narrow and slightly curved shape. On the other hand, New Mexico Chile peppers are up to 6-8 inches and wider, with a more rounded shape. Also, the color of the peppers is going to be different.
Addthe onion and cook until soft, about 10 minutes . Add the garlic and cook until fragrant. Add the shredded pork, canned tomatoes, chicken broth, salt, coriander, cumin, oregano, chile powders, paprika and chiles. Bring to a boil and then simmer on low for at least 1 hour. Up to 2 hours is good.
